If you are looking for a healthy and tasty substitute for meat, oyster mushrooms are a good start. They are rich in protein, fibre, vitamins, minerals and antioxidants such as selenium, known to protect the body from damage that can lead to chronic diseases. Unlike meat, they are fat, cholesterol and gluten free. They are also low in calories and sodium.

Oyster mushrooms look like a soft white to light-brown canopy with a thick stem. They are smooth, firm and have no scales or warts. They grow in shelf-like formation with overlapping clusters. 

Oyster mushrooms taste mild and woody. To some people though, the taste is one that needs some getting used to. Research shows that in some individuals, mushrooms have unpleasant side effects when consumed with alcohol. 

Simple recipe: Over medium heat, fry onions until translucent. Add chopped oyster mushrooms and minced garlic. Constantly stirring, cook for about two minutes. Reduce heat, add salt and pepper to taste, cover and simmer for about five minutes, stirring occasionally until they soften and release juices. Add chopped spring onions and simmer for one to two minutes. Serve with ugali.
